honey butter cashew square


Everything about these bars are perfect. Everything from the how delicious the flavor is to how easy it is to make is an absolute dream. One bowl, one whisk, you could even get away with a fork, and one pan! Literally, nothing more. Its so simple and it makes for a very addictive, chewy, nutty & honey square that you won't want to share. (haha that rhymed!)


They are similar to a blondie but just a bit more chewy, a couple more nuts, and they have a very nice honey flavor throughout! These guys also stay super fresh for a week if you wrap them well. But trust me you won't see them after a day. I alone had four within the hour that they came out of the oven.

Makes 9 squares


Ingredients:.

  • 3/4 cup light brown sugar

  • 1/4 cup honey

  • 1/2 stick of butter, softened

  • 1 egg

  • 1 cup of all purpose flour

  • 1 teaspoon of baking powder

  • 1 teaspoon of salt

  • 1 cup of unsalted raw chopped cashews

Instructions:

  1. Preheat your oven to 325 degrees Fahrenheit and prepare your 8x8 baking dish by lining it with parchment paper and spraying it with baking spray to make sure that the cashew bars will come out.

  2. In a large bowl combine the brown sugar, honey, and butter until smooth and glossy but do not whip. You don't want air in your batter.

  3. Next add in the egg and mix until well combined.

  4. Then add in the flour, baking powder, salt, and chopped cashews. Mix until everything has come to make a delicious smooth batter.

  5. Pour the batter into your prepare baking dish and bake in the oven for 40 minutes or until the center doesn't jiggle too much. There should be a bit of a jiggle.

  6. Cut into 9 equal pieces and enjoy warm or cold! Both are great but is my favorite.


P.S.: If you are feeling super lazy ignore all the instruction and throw everything into a bowl and mix it until you get a nice homogenous mixture.
