Crispy Potato Tacos in Under 10 mins

Ever since taco bell took away their crispy potato option I've been feeling like a part of me has been missing. So this morning I decided to make some crispy potato tacos and guess what... they came out BOMB AF.

I made everything including the crispy potatoes in 10 minutes which was a totally win.

I already had some ready to go crispy corn tacos so I just smashed some avocado on top while my potatoes was nuking in the microwave. I still had some extra time on my hands I looked in my fridge and saw some kale and parsley. The kale wasn't necessary but I decided "HEALTH" so I rough chopped both of them, squeezed a little lemon over top, and mixed it together.


By then my potato was done so I chopped it up and threw them into a cast iron along with some sliced up sausages from trader joes. I let them crisp up to a nice crunchy golden brown. This took about 2 minutes on each side. Scooped them out of the pan once they were done, put them on top of the tacos, and ate my morning away. Best. Morning. Ever.

Crispy Potato Tacos

Makes 2 tacos

Ingredients:

  • 1 medium sized yellow potato

  • Sprinkle of salt, garlic powder, & onion powder

  • Handful of kale

  • Handful of parsley

  • 1 lemon

  • 2 flat & crispy corn shell

  • 1/2 an avocado 🥑

  • 1/2 chicken sausage, sliced

  • Cholula, optional

Instructions:

  1. Grab your potato and poke a bunch of holes in the potato using a knife or fork. Place it in the microwave and nuke for 5 minutes on high. In the meantime, roughly chop your kale and parsley together until they are in small-ish size pieces. Squeeze some lemon juice on them and stir to combine. Set aside.

  2. Take half of your 1/2 an avocado and using a fork gently smash it on top of your corn tacos. I do this so I don't have to wash a bowl but if you want you can mash it in a bowl & then spread the avocado on to each taco.

  3. Take your potato out & carefully chop into large cubes. (Warning: it will be hella hot!) Add some oil into a cast iron pan on medium heat and place your cubed potatoes & sliced sausage in. Hear them sizzle, here them roar!! Sprinkle on salt, garlic power, & onion powder. Flip to sear other side & done!

  4. Place them on top of your taco shells, shake on some cholula, and have the best crispy potato taco there ever was.

You can even fry up a crispy egg too!
